The same reason anything "smells." Molecules are released which are sensed by our brains after being picked up by olfactory neurons (nerve cells) in our nasal passages. I assume you mean why it smells "bad."

I learned in chemistry that organic compounds are particularly smellier than non-organic ones, and look what poop is made of: undigested possibly rotted food and other chemical garbage.

Poop smells mostly because of the bile that our digestive tract is mixing with the foods.

Because the bacteria that live in our intestines metabolize a lot of molecules in food that we can't. Since they are living in an anaerobic environment, they have to metabolize those compounds by fermentation. Fermentations can produce all sorts of different compounds with rather nasty smells.
