I think because the heart is associated with life. And most people believe that love is a vital part of life. If you give someone your heart, you give them your life, the part of you that makes you tick. . .your love.

There is also other physical elements like when you get excited you can feel your heart beat. Or when someone hurts you badly you feel an ache in your chest.

And it is a much better symbol than say, the brain. Your heart reacts literally based on physical activity and emotion, so it is the perfect symbol for love.

Because it's the one that gets stirred with emotions and everyone can feel from the heart. I don't any people that can feel from the liver, lungs or spleen.

I guess it sounds the best. I mean, it would sound kind of weird to say "I love you with all my stomach" or something like that.
