My best suggestion for an elegant hotel is The Portofino Bay Hotel: A Loews hotel that is apart of the Universal Resort, it's very nice and elegant, but it also caters to children. AND when you stay in the hotel, you can buy tickets to Universal Studios or islands of Adventure. A ferry will take you across the river from the hotel to the parks AND your room keys can be used as FAST PASSES! No waiting in lines!

I would definitely look into the Disney hotels. If you want elegant, you need to look at the moderate to deluxe hotels. The value resorts are nice, and do the job they are intended for, but elegant is not the word I would use when describing them. In the moderate range, I have stayed at the Caribbean Beach resort and loved it. My kids had a blast, and it was more quiet and reserved than the value resorts. The decor is outstanding, as well as the service. There are multiple pools, so instead of having to go to the big pool, you can use the one by your section. These tend to be a bit more tame. There is the food court, but a sit down restaurant as well.
In the deluxe range, my all time favorite is the Polynessian. I have stayed here for my honeymoon, and with my kids as well. Again, the decor is outstanding, as well as the view. How can you go wrong when Cinderella's castle is just across the way. We got a big kick out of riding the monorail to Epcot and the Magic Kingdom, and my kids to this day talk about being able to see the fireworks every night from our room. The drawback is that it is expensive, although in my opinion worth it.
No matter what you choose, stay on the property if you are planning a Disney visit. There are perks that you get as a resort guest, no matter if you are in the deluxe or value, that non-resort can not take advantage of. Not only do you get unlimited use of the very convienient transportation, you get to enter the parks no matter what. If you are not a resort guest, this is not necessarily the case on a crowded day. Also, they have extra magic hours for resort guests. One of the parks is open early and one late every day, again for resort guests only.
There are two sources that I use when i book our Disney vacations. The first is www.disneyworld.com. You can get pricing and packages for everything, so you know what you are looking at in terms of price. Second is the Birnbaum's guide to WDW. There are lots of guide books, but I have found that this one works the best for us.

It's kind of hard to find both kids friendly and elegant hotels, especially in a lower for a lower cost.
I think that the Disney or Universal resorts are going to be the best. The prices are nominal, the service is great, clean, etc. I think that Wilderness Lodge, Animal Kingdom, Boardwalk and Yacht and Beach Club would all be very good choices for your family. They are all somewhat elegant (I don't know if I would consider Animal Kingdom and Wilderness very elegant, at least in my terms, but they are still very nice hotels.) Also, they all offer really great kids programs and pools.

Try the Hotel Royal Plaza which happens to be on Disney property. It's not owned by Disney; it's just on property. You will not be disappointed. The rooms are very spacious. And the hotel recently remodeled because of the hurricane year before last. They also have free shuttle service to all the Disney Parks and downtown Disney as well. The prices are very reasonable, too.

Try the Downtown Disney resorts. They are very nice, at a fraction of the price. You might also enjoy the Orlando Omni or the Gaylord Palms. Sometimes you can get good deals by making reservations online.

Try some of the Disney hotels. They have so many options and themes in different price ranges. No matter where you go, you'll get impeccable Disney service which is definitely worth the money.
Oh and wouldn't it be fun to go to the Magic Kingdom or something like that?? :)
