I want to write one someday and would love to know what your favorites are and what makes them so scary.

The Exorcist by William Peter Blatty. Just like the movie only better. More detail and more intense.
The Books of Blood by Clive Barker. Very dark fantasy. Clive doesn't pull his puches you "see" all the horrid little details.
Pet Semetary by Stephen King. Sometimes dead is better.
From Hell by Alan Moore and Eddie Campbell. Very dark gruesome Jack the Ripper story.
Edgar Allan Poe's Tales of Mystery and Madness by Edgar Allan Poe and Gris Grimly.Beautiful and deranged art.

Not really horror but my favorite dark fantasy is written by Neil Gaiman. Check out Fragile Things: Short Fictions and Wonders, American Gods and Smoke and Mirrors: Short Fictions and Illusions. Don't forget to check out his graphic novels The Sandman, Mr. Punch, and Stardust.

Gargirl's suggestion re Stephen King is a good one. He is a great storyteller and can make the most mundane things scary!

My five favorites are
The Stand by Stephen King
Night Shift a collection of short stories by Stephen King
Needful Things by Stephen King
The Talisman by Peter Straub and Stephen King
Weaveword by Clive Barker

Enjoy, but leave the lights on! LOL.

It could be more than 5, but these are the books that I definitely recommend when someone says: horror.

Exquisite Corpse (by Poppy Z. Brite) - it's pretty similar to Jeffrey Dahmer's life, but the details are oh so gross. It's really horrific!
Zombie (Joyce Carol Oates) - Oates's venture in the serial killer territory is nothing short of fascinating.
The End Of Alice (A.M. Homes) - Homes's story about pedophilia polarizes audience(me, I love it), but her dissection of the relationship between the pedophile, and a would be pedophile should not be missed.
American Psycho (Bret Easton Ellis) - Is it horror? Or is it a satire? Who cares?
The Vanishing (Tim Krabbe) - One of the most overlooked books in anyone's library. Shouldn't be missed!

Personally I like Goosebumps, they kept me entertained with mystery and non-stop action, they also remind me of a show that use to be on Nick called Are You Afraid of the Dark?
