Milk is an emulsion of butterfat globules within a water-based fluid. Each fat globule is surrounded by a membrane consisting of phospholipids and proteins
There are several websites about milk. I dont know what in particular you are looking at. Is it the structure of milk, or the debate of animal milk, or the nutritional value of milk.
