It's for a science project and it just turns into like the stuff in an ice pack. Is it because of the salt? I'm seeing which will freeze faster; soda water or vegetable juice.

It will freeze, just at a much lower temperature than you are able to expose it to :]. This is because of its organic and non evenly mixed nature (called heterogenously mixed) which makes it in a way semi-solid, so naturally, a solid is harder to freeze than a liquid, hope this helps :)

Another variable is like a coke in a freezer is not frozen but u open it and it will freeze. Salt water will freeze at 26 deg. F. V-8 has lots of acid in it which will retard freezing.
