There are recipes that utilize yeast to impart a specific crust style and taste (such as beer batter) but as a rule not often. As to the Microwave issue while it is true microwaving reduces the vitamin content in foods so do most reheating processes. The real concern that has been the subject of debate is the radioactivity -which is significantly less today than in the 70's. Really the jury is still out on the over all health risks of the Microwave - if you are concerned there are other options - confection, toaster oven and steam reheating are all viable although less expeditious.
