I'd like to see The Wheel of Time by Robert Jordan be turned into a film series. Fantasy series are always a hot ticket and I think it could work well!

"Oryx and Crake" by Margaret Atwood (she wrote the "Handmaid's Tale"). The "Handmaid" movie was cheesy 80s crap, but a good treatment of Atwood is deserved because "Oryx and Crake" is possibly one of the best near-future sci-fi books I've ever read.
