When I go to one i always see a sign that says ' no msg '. what does that mean.

All it's an stuff load of salt.

Monosodium glutamate, sodium glutamate, flavour enhancer commonly known as MSG, Ajinomoto or Vetsin, is a sodium salt of glutamic acid. MSG is a food additive, popularly marketed as a "flavour enhancer".
It's a common stereotype that chinese and japanese ppl use this in their cooking. MSG is not very healthy 4 u when u consume alot of it

Mono Sodium Glutamate...MSG is a flavor enhancer that a lot of people are sensitive to..which means they have a reaction of some sort when they injest this chemical.

So restaurants saying no MSG, indicate they do not cook with it.

MSG is monosodium glutamate, its a compound which enhances tastebuds. Its a salt so it makes you thirsty by pulling water out of your cells. It may cause headaches to some people and its not healthy. It was invented in Japan

MSG is an additive ingredient used for preserving food longer. MSG makes a lot of people sick so places that advertise NO MSG are marketing themselves. But it is a good thing that they don't use it, not that it is harmful.

it means they do not use mono sodium glutamate in their cooking. msg is very bad for you and for years was used heavily in chinese(here, anyway) cooking to boost flavors.
