Three reasons come to mind:
1) they are all written with Cliff-hanger endings making people want to come back for the next episode to see how a situation resolves,
2) They are mostly about romance and intrigue between women (thus they are written to attract a woman's audience) and
3) Women are the demographic most likely to be at home during the hours of those shows.

I have no site or author, and really, I'm not even that informed on this subject since I absolutely HATE soap operas. But...I think it kind of is like an addiction to romance novels, which I do have...
From a woman's perspective, this is my theory on why we get addicted to soap operas/romance novels. The men in these novels are always the epitome of perfection, and not even that ('cause I guess they do have SOME flaws), it's that they WANT the woman. They NEED the main character and they just simply CANNOT resist her. It's classic love stories. I guess soap operas stray from that a little bit with all the cheating and drama, but I think in essence it is the same idea. We like those things because they are an escape...they get us away from the reality of men and life and let us (pretend to) live another's.

Amish is right about the 3rd point, well kind of. Women like to watch these kind of shows because it is a fantasy and we know that they are. We like to fantasize about our lives and pretty much soaps are our fantasies played out on TV. There is no web site that proves it, it is just how it is.

I cant find anything psychological to back it up, but personally i think that women have a lot more empathy for people, and therefore will be able to relate to a lot of characters. Also, if someone is a house wife, they might not be able to go out a lot, so these characters practically become friends.
I remember discussing this once in psychology, but i cant remember who the theorist was. I think things in criminal psychology (wanting to believe someone is worse off than you) might relate.

Or they are secreatly gay and want to see the pretty girls.
