can anyone suggest some good books on the history/culture of Tibet and/or understanding the fundamentals of Buddhism?

there are plenty of good books on Buddhism out there. H.H. the Dalai Lama is a good authority and a good author.
also www.buddhanet.net is a good online rerference guide.
For another perspective between Western/Eastern thought: The Philosopher and the Monk, by Richard Mattieu. His father is a philospher well known in France. He has become a Buddhist monk, and has worked as a translator for H.H. Dalali Lama in France for many years. It's a fairly new book ( two years maybe?), so you will readily find it in all myjor book stores.

I know two great books that will help you better understand Christianity and Buddhism and how they are not all that different. One is written by the Dalai Lama and it's called "A Buddhist Perspective on the Teachings of Jesus" and the other is by Thich Nhat Hank (a Buddhist monk) called "Living Buddha Living Christ".

Both of these books are good introductions to Buddhism because they put it in perspective with the way Christians are taught. I was raised Catholic and these two books gave me a better understanding of Christianity as well as Buddhism. I highly recommend both.
