Why do you feel the need to?

If you are worried about fish in the ponds, they are vulnerable, but raccoons tend to do more damage than cats. Make sure the ponds have some gotttos where the fish can hide. Build them out of heavy stones, so that the raccoons can't lift them or push them off. Cats don't do that and the fish will nearly always get away if they have a refuge.

If you have a problem with cats scratching and rolling in the garden, some plants do tend to attract cats and others do not. Rue and Coleus Canina are not attractive to cats, the mint family is highly attractive (catnip is a form of mint). I would plant rue and other unappealing (to cats) plants round the margins of my main garden, and have a separate, "sacrificial" plot planted with catnip and other mints where the cats could enjoy themselves.

Some people will camp out with a hose or spray bottle and squirt the cats when they appear, but cats have more patience and persistence than you do, so that is not likely to work.

Try spraying vinegar around the areas. Cats hate the smell. You may have to do it often because rain and snow will wash the odor away.
