in the printing options check "gray scale" or "print in black" box and you will get the same in different shades of black..

no. epson will not allow you to print if your cartrides are at all empty or physically our of the printer.

you may be able to go into your printer settings and select a grayscale or all black print option, but you will still need to have non-empty cartridge(s) in the colour slot(s).

Yes, but if the item has colors in it, set your printing page to black and white so that the colors will appear as different shades of black and you can still see the item.

May I suggest you look at Printer Options, specifically "Preferences?" You should be able to select "Print everything in Black."
Give it a try.

I'll chime in with another YES. Also, even if you still had color ink left, you can still opt to print only in Black Ink. Saves your color ink :)
