Of course you can, and not only with photoshop.
The only question is : do you have enough pixels ?

You can, but it's recommended that if you have text you should use other packages to generate this and do all the visual stuff in Photoshop. InDesign is a good package that works easily with Photoshop, mainly because you can import images straight as a psd file rather than messing around with compatible file types etc. It has endless opportunities.
The user interface is pretty standard across the Adobe range with some tools looking similar so you should pick it up easily.
You can get free trial downloads fromall over the Internet, try the Adobe / Macromedia website.
