COCONUT FRIED RICE:
4 Tbsp. peanut or vegetable oil
3/4 cup red onion, minced
4 Tbsp. garlic, minced
3/4 cup red pepper, minced
3 Tbsp. ginger, fresh, minced
11/2 Tbsp. red chile flakes, crushed
3/4 gallon basmati rice, cooked
4 Tbsp. sugar, granulated
3 cups coconut milk
to taste, salt
4 Tbsp. toasted coconut shavings
Heat peanut oil in 14" sautè pan over high heat until just beginning to smoke. Add the red onions and cook until opaque. Add garlic and continue to sautè until aromatic. Add red peppers, ginger, and red chile flakes and sautè for one minute. Add the cooked basmati rice and sautè for one minute. Add coconut milk and sugar. Cook until absorbed. Season to taste with salt. Add in toasted coconut just before serving.

Asian Coconut Rice
INGREDIENTS
1 (14 ounce) can coconut milk
1 1/4 cups water
1 teaspoon sugar
1 pinch salt
1 1/2 cups uncooked jasmine rice
DIRECTIONS
In a saucepan, combine coconut milk, water, sugar, and salt. Stir until sugar is dissolved. Stir in rice. Bring to a boil over medium heat. Cover, reduce heat, and simmer 18 to 20 minutes, until rice is tender.

Hawaiian Fried Rice with Coconut
1 cup uncooked Basmati rice
3/4 cup canned unsweetened coconut milk
1 tablespoon fresh ginger
1/2 teaspoon salt
2 tablespoons butter
2 carrots, diced
6 scallions, chopped
2 tablespoons sweetened, flaked coconut
1 clove garlic
2 tbsp fresh cilantro
1 tsp grated lemon peel
In a medium sized pot over high heat, combine one cup water, rice, coconut milk, ginger, and salt. Bring to a boil, reduce heat to low. Cover, simmer for 15 minutes. Remove from heat. Let stand until rice is tender and liquid is absorbed (about five to ten minutes). Fluff with fork.
Meanwhile, in a large skillet or wok, melt butter over high heat. Add carrots, scallions, coconut, and garlic.
Cook, stirring constantly, until carrots soften slightly (about three to four minutes). Add rice mixture. Cook, stirring frequently until rice is lightly browned and no longer sticky (about three to four minutes). Remove from heat. Stir in cilantro and lemon peel.

you get some oil get a hand full of coconut soak it in water get some rice put it in the same water as the coconut when the oil gets smoking hot throw everything in there bom bam you got something maybe a grease fire but your cooking. Shake and Bake
