It's all in the physiological make up of the eyes and how the brain percieves and decodes the data feedback.It's not just black and white ,they see in tones of the colors.

Most mammals are dichromatic which means they only have 2 types of cone cells and can see few colors than we can. Humans have 3 types that allow us to process colors.
