Must you convert in order to marry her? I don't know... It depends on her and how religious she is.

The process of converting to Judaism is called "Giyur". It is considered long (half a year to a year) and hard, but in the end you are considered and treated as a Jew in all senses.
The first thing you should do is contact a Rabbi (preferably of the religious movement of your girlfriend); he traditionaly should reject you, but if you insist and show him how important it is for you, he will teach you the first lessons about the faith and will connect you to your further levels.

You can read about it here:

I've read several of the replies telling you why you should not convert. I can say that those opinions come from people who have no idea about Judaism, and see all religion through a Cristian lens.

Let me explain in a practical sense why a Jew would chose not to marry a non-Jew, or to ask for a conversion. Judaism, for the most part, is very different from Christianity in its lack of emphasis on belief. There is very little dogma about what Jews believe or have to believe to be a Jew. Most of us do not have a deep personal relationship with G-d as it seems Christians do.

Instead, we place high value on action and one's way of life. Judaism is about living a Jewish life according to G-d's law. Having a family is part of that way of life, so a Jew would want to ensure a Jewish homelife by marrying a Jew.

I hope this helps a little.

Don't do it.
Your religion should not be determined by your love for your spouse, but rather by your connection to God.
If you choose Judaism, let it be because you embrace Judaism. Otherwise you are just looking for trouble and heartache.
