put a chicken breast to boil, add an onion, 2-3 pieces of garlic, carrot, parsley root and some other roots you like; boil them together and when the meat is done, take it out and cut into rather small pieces and put it back into the soup. The vegetables can be made in the blender, then put it back in the soup. When it's ready, add fresh garlic ( squeezed, transformed into a cream ) and cream or yogurt. It's a Romanian recipe.

The best base for any soup is an onion, stick of celery and a carrot, sauted in a little oil.
From there you can make pretty much any soup.
Minestrone (traditional!)
2-4 rashers bacon or slices thick ham
large clove garlic
400g tin tomatoes
1- 1.5 pint stock
dried mixed herbs (to taste)
handful of green lentils
1/4 white cabbage (add 15 minutes before the end)
Add these ingredients to the onion, carrot and celery mix and simmer for about 45 mins. Add the white cabbage 15 minutes before the end. NB if you use stock cubes do not add these til the end as the lentils won't cook properly due to the salt content. Season to taste.
White bean soup
1.5-2 pints stock
leek
1-2 cans cannellini beans drained and well rinsed.
1-2 large cloves garlic
fresh or dried basil.
Bung the whole lot in the saucepan and simmer until veggies are cooked through. Blend in small batches, season to taste and serve with crusty white bread. Yummy!

Carrot and Ginger Soup
INGREDIENTS
1/2 medium butternut squash
2 tablespoons olive oil
1 onion, diced
1 pound carrots - peeled and diced
3 cloves garlic, crushed or to taste
1 (2 inch) piece fresh ginger, peeled and thinly sliced
4 cups water
salt and pepper to taste
1 pinch ground cinnamon
1/4 cup heavy cream (optional)
DIRECTIONS
Preheat the oven to 350 degrees F (175 degrees C). Scoop seeds out of the butternut squash half, and place cut side down onto a greased baking sheet. Bake for 30 to 40 minutes, or until softened. Allow to cool, then scoop the squash flesh out of the skin using a large spoon and set aside. Discard skin.
Heat olive oil in a large saucepan or soup pot over medium heat. Add chopped onion and garlic, and cook, stirring until onion is translucent. Pour in the water, and add squash, carrots and ginger. Bring to a boil, and cook for at least 20 minutes, or until carrots and ginger are tender.
Puree the mixture in the blender, or using an immersion blender. Add boiling water if necessary to thin, but bear in mind this is meant to be a thick creamy soup. Return soup to the pan, and heat through. Season with salt, pepper and cinnamon.
Ladle into serving bowls, and pour a thin swirl of cream over the top as a garnish if desired.

Put 2 Cartons or four Cans of Chicken broth in the pot Add all ingreidents, and on medium heat,cover and cook, meanwhile cut up the chicken removing the bones,and add to soup. cook until the vegetables are done. You can cook some rice or thin noodles to serve with it.
You can also with the same ingreidents minus the chicken, and chicken broth. Add Beef Broth instead. and Beef meat. Also add all types of dry beans or buy the pack that has 16 bean soup.and let that cook until the beans are done. Serve with Tiny Tiny Tube macaroni ______________________________________

This soup is very good it is called
Meatball Pasta Soup
1 (1 pound) package frozen cooked meatballs
1 (28 ounce) jar pasta sauce
6 cups water
1 cup pre-shredded carrots
3 cloves garlic, minced
1 green bell pepper, chopped
1 cup orzo pasta
1/2 cup grated Parmesan cheese
In large stockpot combine all ingredients except for green bell peppers, pasta, and cheese. Bring to a boil, then reduce heat ato medium low and simmer for 15 minutes. Add peppers and pasta; cook over medium high until pasta is tender, about 8-10 minutes longer, stirring frequently. Serve with cheese and enjoy!

Chicken Tortilla Soup:
Fry a onion and some garlic until tender. Add diced carrots and zucchini, and cook till tender. Use spices like cumin, coriander, salt, chili powder, and pepper.
Add dice of chucked chicken, pre cooked.
Add about 6 quarts of chicken broth, and a can of diced tomatoes, and allow to simmer for about a half hour.
Top with slice avocado, sour cream, and some pepper jack cheese.
