I 'm making BBQ Chicken pizza. Does anyone know a good way to precook the chicken before putting it on as a topping so that it isn't too dry when the pizza's done and it has a nice texture?. I was thinking George Foreman grill then putting it in BBQ sauce (homemade of course). I'm open to most types of cooking but I don't have an actual barbecue.

G.F. grill works great, and if you let the chicken rest or cool for a few min., before you slice it, it will be juicier. And make sure that you put the cheese on last it keeps the other stuff from over cooking or drying out..

That sounds like a good idea. Just don't cook it for too long so it doesn't get dry. I usually fix the chicken by putting it in a small casserole dish with a tablespoon of water, cover and bake at 350 for 30 minutes, 40 minutes if large. That helps retain the moisture.

I make BBQ chicken pizza's often and have the most success if I slightly under cook the chicken (pan fry) and let it finish cooking while baking in the oven.

I recommend a brine, a salt water solution, to give the chicken moisture and flavor. That will keep it tender through the grilling or baking process.

Try marinading it in a good BBQ marinade. Tesco's do a fine range. Coat [generously] for 30 minutes and then you can fry in [teaspoon of olive oil] or GF it. The meat will be uber tasty and moist.

what I do is to keep the skin to cook. and add some butter.
