It's easy to become one, it's difficult to stay healthy as one.

All the best!

Well, I've been a vegetarian ever since I was born (only 14 years)so it's really easy for me to stay one. Honestly, it won't be easy for you to just give up meat. It depends whether you want to be a vegan or a vegetarian. Vegans don't eat any form of meat or dairy products (I'm pretty sure) and vegetarians don't have meat either but do drink milk and eat cheese. Eggs can be controversial. Some vegetarians eat them and others don't. It's like a hybrid meat-dairy product (In my opinion). I don't eat eggs at all. If you are a vegetarian, then you can't eat meat (obviously), poultry, or seafood. It is your choice as to what kind of vegan/vegetarian you want to be and what you want to eat/not eat. Some tips to stay a vegetarian:
1. don't let advertisements get the best of you
2. Look up some easy vegetarian recipes on foodnetwork.com
3. Eat lots of fruits and veggies. (There are also plenty of other vegetarian foods to eat)
4. Stay strong and determined.

If you are aiming for a big change, I would try Vegitarian FIRST. Vegan is very drastic from a normal diet. Unlike vegitarians, Vegans eat NOTHING that does not come from the earth. This means no milk no dairy of any kind, no butters or oils..... Basically beign vegan means nothing but fruits, nuts and veggies. Pretty tough to start off and I am not certain that it is the healthiest lifestyle. Most vegans I've known are left to nothing more than that and brown organic rice and potatoe. Pretty starchy diet.

However, vegitarianism is GREAT! You cut out all meats - bascally don't eat any animal parts - but can enjoy dairy products such as milk, eggs, and cheese - even butter. This is better for you body so you are getting protein and some fat in your diet.
If you look at many food exchanges, you can substitute your protein portion for many varieties of flavored tofu (I prefer extra firm cause if has a good texture) and please don't dismiss it - because it does taste good. Boca burgers and boca chicken patties are NON MEAT products and may help you on your way to starting a Veggie lifestyle. You can eat all breads and pastas provided there is no meat in them (like a stuffed beef ravioli obviously would not be a go...)

Here are some of the things I enjoy that are vegitarian and some even vegan and vegitarian.

CARBS>

Wheat free, Gluten free - Vegan lightly salted rice cakes.
Genisoy brand soy chips - garlic cheese flavor
wheat free, gluten free chocolate chip cokies from Wild Oats market (these are DELISCIOUS and crispy...)
Rye crisps
Lowfat Triscuts
Melba toast
Whole grain breads

FATS and Protiens:

Raw Almonds
Cashews (althought watch portions cause these are fatty)
Peanuts
Peanut butter light'
Cashew butter unsalted (trader Joes)
String cheese
Alpine lace Swiss (from you deli counter)
Lowfat sharp cheddar or even Jack cheese
Cream cheese

Carbs / Fiber rich and full of nutrients:
Whole Wheat pastas (from any grocer)
Wheat free, Gleuten free Brown Rice Pasta (WIld Oats)
Instant Brown rice (any store and EASY to make)
White rice - but not as nutritious....
Black beans
Pinto beans
Vergitarian refreied beans fat free (Safeway "Rosarita brand" -
these are really good with a little taco sauce and a sprinke of cheese... keep you full a long time cause of the high fiber, low fat and high protein........)
Garbanzo Beans (hummus)
Hummus is a dip made by blending garbanzo beans into a puree and adding seasonings like lemon, garlic and herbs with a little bit of olive oil. Very healthy and filling..........

Veggies"

You name it - you can eat it.
My fav it so scoop out the seeds in a spegettie squash, wrap the top in plastic wrap and microwave till cooked.... Then scrape out the inside - it scrapes out EXACTLY like spegetti.....and you can put a little marinara and paremesiano on top. It is VERY healthy and tastes EXCELLENT.

My favorite fruits are nectarines, Pink grapefuit, and peaches.

Kiwis are very sweet and good too.

Feel free to email me if I can be of any firther help to you.
I am happy to help you become a vegitarian. It is really not that hard.

I am not a vegetarian, but one of my friend is. I asked her what compelled her to become a vegetarian, and she answered she had visited the chicken factory and beef slutterhouse. Since then she stopped eating meat.

IT'S EASIERS TO BE A VEGETARIAN AS OPPOSED TO A VEGAN (EAT NOTHING WITH EYES). VEGETARIANS DO EAT FISH WHEREAS VEGANS WON'T.
