How can you reduce the pungency of chilies as you prepare a dish of spicy food with chilies known for their overwhelming hotness (such as jalapenos and scotch bonnets)?

add less than what the recipe calls for or mix the hot chili with a milder one.

Example recipe calls for 2 teaspoons. Do 1 teaspoon of the hot chili and 1 teaspoon of the mild chili.

This should still give you some of the flavor wit out the hotness.

The seeds are what make it hot. Scrape them out with a knife. You could add less of the chilie.

Cut them up and take out the veins in them...yes, taking out the seeds helps, but to get reduce it the most, take out the veins.
