It's a matter of controlling salt in recipes. But have you ever eaten unsalted butter on a fresh baguette? You'll never go back if you taste the taste of sweet butter....delicious!!!!

The amount of salt in the salted stick of butter may not be the correct amount needed for the recipe so it's easier to use an unsalted stick and add the salt later so that you control the amount going into the recipe.

Because you can control the salt flavor better. If you cook salted butter down, it can become VERY salty. If you use unsalted butter, then you can salt to taste (or leave it out altogether if you are trying to reduce salt in your diet).
