I have a big for pound box of them but am only planning to use about... 2 small fillets... and i really would rather not fry them because i always leave the room and forget.. and burn them.. lol so.. any recipes to bake them?

I melt a little butter in a frying pan and sprinkle about a tsp. of cajun seasoning into it. I fry the fish for about 3 mins on each side till golden, then I add about 1/4c of water and cover it. This steams the fish and makes it really tender and a tiny bit spicy. Sometimes I add caper-berries to it but that's optional. I use this recipe on salmon, cod, sole, especially on our boat because I can't carry a great variety of ingredients and it seems to complement each fish wonderfully.

Mango-licious Tilapia
My son's girlfriend, Nicole, named this 'mango-licous'. The mango salsa is great over the tilapia, as a dip or on cottage cheese. Try serving the tilapia over brown basmati rice or lightly dressed salad greens for a complete meal. Then generously top with the salsa. Mango-licious!!!"

INGREDIENTS
4 tilapia fillets
2 tablespoons olive oil
1 1/2 tablespoons grated orange zest
1/4 cup fresh orange juice
salt and pepper to taste
crushed red pepper flakes to taste

Salsa:
1 mango - peeled, seeded and diced
1 small red onion, finely chopped
1 avocado - peeled, pitted and diced
3 roma tomatoes - peeled, seeded and chopped
1 jalapeno pepper, seeded and finely chopped
1 tablespoon minced fresh ginger root
1/4 cup chopped fresh cilantro
1 teaspoon kosher salt
DIRECTIONS
Preheat the oven to 400 degrees F (200 degrees C.)
In a shallow baking dish, combine the olive oil, orange zest, orange juice, salt, pepper and chili flakes. Rinse the fish fillets and pat them dry. Place them into the baking dish and turn to coat with the seasonings.
Bake for 10 to 12 minutes in the preheated oven, until fish can be flaked with a fork.
While the fish cooks, combine the mango, onion, avocado, tomatoes, lime zest, jalapeno, ginger, cilantro and 1 teaspoon kosher salt in a glass bowl. Stir to blend and set aside at room temperature until fish has finished cooking. Place fillets on a platter and spoon the salsa over them to serve.

Well, I did this last night (and it also works well on chicken) and my finicky 5 year old ate it, and she doesn't like anything except carrots and cheese...

Beat two eggs and a smidge of milk
Dredge your Tilapia in the egg mix
Dredge in Panko (Japanese Bread Crumbs, found in Baking Aisle) or Breadcrumbs

Place on baking sheets and drizzle with melted butter (you can add lemon or any other spices to the butter)

Bake in preheated 350 degree oven for about ten minutes or until fish flakes easily (about 45 minutes to 1 hour for chicken)

It's very easy, and a lot healthier than any store-bought fish filets.

Good luck and you can try just baking the filets with spray butter and cajun seasoning.

Fillet ole - put about a half cup of your fav salsa in bottom of baking dish put fillets on top cover with more salsa , bake at 375 for 30 mins , top with cheese , olives , green onion , sour cream or whatever you like , its easy no mess and delicious

Here's a simple microwave recipe:

Put chopped ginger, lemon slices, salt and pepper on top of tilapia. Microwave for 3 minutes. While fish is in the microwave, mix sesame oil, soy sauce and a little oyster sauce in a separate bowl. When fish is done, pour mixture over it and top with coriander.

Sprinkle them with balsamic vinegar, garlic salt, and black pepper. Then coat them in toasted breadcrumbs. Bake on an ungreased cookie sheet for 20 minutes at 400

here's a simple tasty recipe for you, what you need is buttermilk, coconut flakes, coconut milk, some olive oil, and salt and pepper, mix coconut milk with butter milk, and mix some salt and pepper with coconut flakes, dip your fish in the butter milk then roll it in coconut flakes, coat a tray with olive oil and lay the fish then drizzle some oil on top and back at 350 for about 10 min remove and flip over and back again for another 10 min remove and enjoy with steamed vegetables, or rice or any side dish you like

Its not really a recipe ... I usually just sprinkle them with onion salt, garlic salt and some italian seasoning, and maybe spray with that fat free butter. Its not terribly flavorful, but it is light and healthy.

You can put 2 oz. scampi sauce on each and cook in oven or microwave.When done,serve on rice.

grill them, or steam them. they're great with ginger sauce.
