It might look gross, but it'll taste great when it's cooked!

It's the same stuff that we have under our skin too, think of any programme you watch where they do liposuction or eye lifts lol!

It's fat. It doesn't look right to you because it hasn't gone through the process of "hanging" or aging. Because the beef we usually see has already been aged, the character of your fresh meat can seem odd to you. The fat is needed for flavor & moisture during this process & can be cut away before or after cooking (I recommend after). I would also recommend for you to look up a beef specialist on line so that you can understand this process better & learn to do it yourself. I'll bet you've got a wonderful hunk O' beef on your hands so don't rush it...get advice quickly then proceed.....YUMMY & Bon appetite!!!

It could be fat or it could be that your cow had a infected sore , and what you may have is what they call a pus pocket, get it checked out before you eat any of the meat.check it out for a foul smell
