okay first cut up the potatoes and preheat the oven to about 400 for about 10 mins. meanwhile cut up the potatoes in half w/ the skin on and the zuchinni and toss them with olive oil is good, salt, pepper and some dry herbs like rosemary or thyme or something. whatever you have around. throw them in the middle rack of the oven until they look brown and you think they're done. try one if you're not sure. as for the asparagus put some water in a pot until its simmering and throw the asparagus in for about 4 mins until they turn a bright green . after 4 mins take them out and put them in ice cold water, take them out after they've cooled , about a minute. now make the dressing! about 1/4 cup olive oil, 4 to 5 tablespoons of balsamic vinegar, salt, pepper, and some chopped herbs. take your roasted veggies out of the oven after they've turned golden brown and you asparagus and pour over desired dressing. you can serve this w/ some pasta just tossed with butter, salt and herbs. hope you enjoy!

Yum. This is how I would cook your veggies. Wash all the veggies. Break the stalk ends off the asparagus. Cut the red potatoes into large wedges; leave the skin on. Slice the zucchini. Stir fry them in a skillet. You will want to cook the potatoes first because they take longest to cook. I would add the asparagus next; then the zucchini. I prefer my vegetables just slightly undercooked - not mushy so be sure to test them so you don't overcook. You can use a spray like PAM or butter or olive oil. I would prefer butter flavor PAM (healthier than butter). I would lightly season with Seasoning Salt or other light spices you like. Cook some white rice. If you are not a big cook buy the boil in bag type. Enjoy. *You can always add other vegetables like tomato wedges, onions, brocolli, carrots, etc.

For the asparagus, put them in a 9x11 baking dish. Drizzle them with just a bit of the olive oil and put pats of butter around on the top of them. Use only salt and pepper and put them in the oven at 350 for about 25 minutes, depending on the size of the asparagus. They are done when you can cut them easily with a fork. As you say, yummy! For other fun cooking stuff, I found this you may like.

If it were me - I would roast all of them - or grill. The potatoe will take longer than the greens - marinate in rosemary, and or thyme with a lemon vinagrette - depending on the thickness that you cut the potatoes, use olive oil, and a touch of the balsamic....check your spices, and see if you have some OJ, fresh lemon, or orange.

Steam it. It will still have a bit of firmness to it unless you like it mushy then you can boil it. You can also saute it in olive oil and a little butter with Nature's Seasoning by Morton.

just BLANCHE your asparagus by immersing it in boiling water for 2-3 minutes, depending how cooked you want it. Drain them and drizzle with olive oil, balsamic vingear, salt and pepper...add parmesan cheese if you have it :)

you can saute them in a white wine/butter sauce...very delicious..or steam them...or just biol...but if you boil them you will lose some of the nutrients..try the saute over low/med heat with a little 0trans fat conscious butter and add the wine slowly...reduce and just simmer...should be done in about 12-15 min..and delicious..
