I've set regional settings to Australia and cell formats to dd-mm-yyyy, but still my typing is recognised in the American order and 3/1 (3rd Jan) becomes 1/3 in display. I can't 'cheat' and type backwards because I want to calculate between dates, and display then in the Australian date format. How can I get my dates to type AND display in Australian order?

Make sure that in your Regional Settings, your Date format in dd-mm-yy instead of mm-dd-yy

Doing restart after changing the Regional Settings will make them affect also

Type "31 Jan" instead of "31/1", Excel won't mess it this time. For last year type "31 Jan 2007"
