According to Dr Atkins, you can't overeat on his way of eating.
You didn't say how much you weigh and how much you want to loose.
Caffeine is not bad. Lots of people that are on Atkins, still drink coffee. You should try to stay away from diet sodas though, they can stall your weight loss.
Do you have the Atkins book? Have you read it? If you want this way of eating to work correctly, you need to read the book.
Ketosis normally takes only 48 hours to get into, not a week, if you are doing it correctly. Get some keto sticks (ask for them at the pharmacy at Wal Mart) . You pee on them and if they turn any shade of pink or purple, you are in ketosis.

The regular meals don't seem that bad. Snacking, depending on how much you consume, could be too much but I am guessing that you eat a few bites to curb hunger only and that you are doing normal activity.
Caffeine is not that bad since it does curb appetite and speeds metabolism.
Ketosis usually takes about three days to a week to enter. On Atkins, three days is normal. You will know you are in ketosis when, in the morning when you awake, your breath and mouth smell medicine like (halitosis) from your body using stored fat to feed itself since you are starving it of its natural and preferred fuel - carbohydrates.

You can overeat on any diet. Please work with your doctor when considering any radical diet. Once in a while someone has kidney problems with this particular diet. Not often, but get your bloodwork done by you doctor.
