I need to know what we need to make gumbo and how to make gumbo. Thanks!

Chicken and sausage gumbo
1 16 oz jar roux
1 whole chicken
1 or 2 links andouille sausage (or high quality smoked pork sausage)
2 bunches green onions
fresh parsley
2 or 3 bay leaves
-adjust seasonings to taste-
1 tsp red pepper
1 tbsp tony chacere's or similiar cajun seasoning
1 tsp garlic powder
1/2 tsp MSG


In a large, heavy pot
Boil the chicken and debone - save the broth
bring broth to light simmer and add 1/2 to 2/3 of roux ( it will be lumpy and hard, use spoon to break up ALL clumps when in broth)
watch pot as it can boil over when roux is added
skim grease
slice sausage and add to pot
add water as needed
chop onions and add to pot (including green parts)
add chicken
add seasonings
simmer for an hour or so
sprinkle chopped parsley on top


Serve with rice.
Gumbo's key is the roux. It has to be brown and lots of it for taste. Roux is no more than flour browned in oil. think of it as slightly toasted gravy. Roux is easier bought at the store than home made. You can burn it very easily.

Also Real Cajuns will only use a cast iron pot and a wooden spoon to stir with.

You can make gumbo out of any meat or seafood or both.

SHRIMP GUMBO

1 box Zatarain's gumbo base mix without rice
1 lg. onion, chopped fine
3 bay leaves
1 bunch green shallots, chopped
1 (16 oz.) pkg. cut-up frozen okra
1 lg. can cut tomatoes, drained
Salt and pepper to taste
1 tsp. gumbo file
3 lb. shrimp, peeled and cleaned

In large soup pot, cook gumbo base mix according to directions, add 3 bay leaves. After mix has cooked for 30 minutes, add onions and shallots and cook for 15minutes. Add okra and cook for 15 minutes. Then add tomatoes, salt and pepper and cook for another 15 minutes. Add shrimp and cook over medium heat until shrimp are pink. Stir well. Turn heat low and cook for another 20 minutes. Add gumbo file' before serving. Serve gumbo over rice. Serves 8 to 10.

CHICKEN AND SAUSAGE GUMBO

3/4 cup all-purpose flour
1/2 pound smoked sausage -- sliced
3/4 pound chicken breasts -- cook and shred
1 cup chopped onion
1/2 cup chopped green pepper
1/2 cup chopped celery
8 cups water
2 cloves garlic -- minced
1 bay leaf
1 1/2 teaspoons cajun seasoning
1 teaspoon salt
1/2 teaspoon dried thyme
1/4 teaspoon black pepper
1 tablespoon Worcestershire sauce
dash hot sauce
3/4 cup sliced green onions
4 cups hot cooked rice

Prepare chicken breasts and shred. Set aside. Brown sausage, onion, and green pepper in skillet. Drain fat. In Crock-Pot, combine shredded chicken, sausag e mixturee, celery, water, and seasonings. Cover and cook on Low 6 to 8 hours or on High 3 to 4 hours. serve over rice and garnish with the green onions. Serves 8 to 10

Gumbo is a chicken stew thickened with one of three things: roux, okra, or gumbo file.
Any chicken stew thickened with one of those three is Gumbo.
