Ricky Martin is still huge in Mexico. He has become very involved with charity work recently.
William Hung is currently in college.
All That was cancelled due to stupidity. :-P
Hey Arnold was made into a feature film which kinda killed the show.

Most of the shows you mentioned were on Nickelodeon. Times are changing and they've become more of a teen-oriented channel. I miss the old days as well.

Most of the people just faded from the spotlight. Either their 5 minutes of fame was up or they're just not working on any projects at the moment.
The shows were either cancelled or ended for some other reason. I agree on a lot of the old school Nickelodeon shows. They were great.

I think you're thinking of Billy Gilman. Billy Graham is an evangelist. Gilman had to wait until his voice changed and last I heard he was working on some songs.

Wow - I remember watching so many of those Nick shows when I was growing up, Rocko and Catdog were my favorites. I don't know why they were cancelled, but YouTube has lots of Rocko videos that I watch a lot, try looking there!
