I am going on a healthy eating kick before I end up on the show six feet under.

It would be greatly appreciated if you could send my way a variety of clear both soups that are good tasting and healthy and filled with veggies. I am open to any style from Oriental to French. Just get me cooking.

We have been making vegetable soup on the weekends and then freezing it in individual containers to zap in the microwave during the week.
I start with a large can of Swanson's chicken broth, add my fav veggies on hand like carrots, cauliflower, onions, zucchini, potatoes, and sometimes frozen vegetables. Cook until the potato's is tender about 30 minutes. (add cooked chicken or turkey or any other veg you want).
My guy uses chicken bullion cubes and adds his fav veggies and mushrooms, garlic and puts in about 1/4 cup of chili garlic sauce you can find it in the oriental section of the grocery store. It comes from various countries like Thailand or Vietnam. This is only if you like a really spicy soup!!!! There is all kinds of sauces you can try in that section have fun with it!!
(btw he lost 20lbs in January just changing his diet with less snacks and more soup)

Make a minestrone. Use veggie broth or tomato juice and water(thats what i do). Add zucc, carrots, onion, stewed or diced tomatoes, celery, italian green beans, and kidney beans. Add 1-2 bay leaves while cooking.

Tortilla soup- same broth as above, corn, black beans, onion, carrots(small dice), celery, diced or stewed tomatoes, cumin,pepper, red pepper(optional), onion powder, salt. Season to taste. Top with baked (or fried) strips of tortilla, cheese, and sour cream- if you like meat add diced chicken sauteed in a little garlic and olive oil. Darn- now I'm hungry!

I also start with either chicken or beef broth. Then I buy this large package of coleslaw mix at Costco (green/red cabbage, shredded carrots) - add it to the soup. I also like to add extra sliced carrots, cellery and sometimes I like to add Chinese greens called bok choi. Yummy, low fat, very healthy. You can add rice to it if you want, or small pasta stars, or shredded chicken meat.

All fruits are fruit and vegetables. A "vegetable" is a plant, any part of which can be used for food.

In the superstore, fruits are usually selected much too soon. Some are rocks, many are bitter. Some of the fruit and vegetables are right (zucchini, onions, garlic, lettuce, greens, and a few others) so I'd have to go with vegetables.
