my kids and i are tired of noodle soups(and fighting coughs). and i already made a rice dish. i'll be making soup tommorrow but have no ideas. we love potatoes, vegetables, tomatoe, and creamy soups aswell.
we're not beef eaters, but we can use chicken and turkey as a substitute. thanks!!

I have a potato soup I love it is thick and creamy
You will need:
5 pound bag of potatoes
1/2 large or 1 small onion
1 large can and 1 small can of chicken broth (you might need more it needs to cover the potatoes I used this amount and it worked)
16 oz of light cream
set aside 3 potatoes peel and chop them
peel and chop the rest of the potatoes and onion and boil them in the chicken broth
the other 3 potatoes boil in water
when ones in broth are done put into a blender or processor and blend till smooth put back into pot and add all of the cream stir till combined then add potatoes from water (so you have chunky potatoes) and it's done
You can add toppings of cheese, scallions or bacon
Good soup for a cold day

Get some 'chicken bullion' cubes and make that up using twice as much water as it calls for. Boil your potato, vegies, and some cooked chicken in it ... and add LOTS of garlic, but no salt ... and put the diced tomato in at the last so it doesn't get all 'mooshy' ... you'll have a good flavorful chicken-vegetable soup that will still help you 'fight those coughs' ... it's the GARLIC that helps the coughs, by the way, and why it works best in 'chicken broth' is a question no one seems to know the answer to.

We have been making vegetable soup on the weekends and then freezing it in individual containers to zap in the microwave during the week.
I start with a large can of Swanson's chicken broth, add my fav veggies on hand like carrots, cauliflower, onions, zucchini, potatoes, and sometimes frozen vegetables. Cook until the potato's is tender about 30 minutes. (add cooked chicken or turkey or any other veg you want). My guy uses chicken bullion cubes and adds his fav veggie and puts in about 1/4 cup of chili garlic sauce you can find it in the oriental section of the grocery store comes from various countries like Thailand or Vietnam. This is only if you like a really spicy soup!!!!

Cook some ground chicken or turkey with onions and garlic. Once cooked, add a whole jar of salsa, a carton of low sodium chicken broth, a can of black beans, canned or frozen corn, chopped zucchini, cilantro, salt, pepper, chili powder and cumin. Simmer for a bit and then serve with homemade nacho chips. I cut soft corn tortillas in four and spray with cooking spray. Then bake in the oven for a few minutes to crisp. This soup can also be topped with cheese and sour cream.

This has a million ingredients, but it is SO worth the time it takes to make:

Minestrone Soup

3 Tablespoons olive oil
3 cloves garlic, chopped
2 onions, chopped
1-2 cups chopped celery
5 carrots, sliced
2 cups chicken broth
2 cups water
4 cups tomato sauce
1 cup canned kidney beans (optional)
(^^ I use canned pinto, drained)
15 oz. can green beans (or fresh)
2 cups baby spinach
3 zuccinis, quartered and sliced
1 Tablespoon chopped fresh oregano
2 Tablespoons chopped fresh basil
salt and pepper to taste
1/2 cup seashell pasta
2 Tablespoons grated Parmesan cheese for topping


1.Over medium-low heat, in a large stock pot, heat olive oil and saute garlic for 3 minutes. Add onion and saute for 5 minutes. Add celery and carrots, saute for 2 minutes.

2. Add chicken broth, water and tomato sauce, bring to boil, stirring frequently. If desired add 1/2 ounce red wine. Reduce heat to low and add beans, spinach leaves, zucchini, herbs, salt and pepper. Simmer for 40 minutes, the longer the better.

3. Fill a medium saucepan with water and bring to boil. Add macaroni and cook until tender. Drain water and set aside.

4. Once pasta is cooked and soup is heated through, place 2 Tablespoons cooked pasta into individual serving bowls. Ladle soup on top of pasta and sprinkle cheese on top. Yummy!

ingrdients:
1.5 onions
8 tomatoes
salt
pepper(red or black)
maggi
curry, thyme and w/e other spices you want
mixed vegetables
chicken and or turkey and or fish
vegetable oil or corn oil or even palm oil

Procedure(lol this sounds so scientific)
1. grind tomatoes until its nice and smooth and watery
2. grind in the one and a half onion in with it
3. pour a good amount of oil in a pot and set it on fire(pour a little under half of the tomatoes worth of oil in the pot)
4. pour grinded tomatoes and onions into the hot oil
after 10 minutes, add salt and maggi to your own desire and add other spices( about 1.5 maggi cubes recommended)
5. let soup cook covered for about 20 minutes and then add mixed vegetables and turkey, chicken, or fish(fried tastes better in it)
6. let cook for another 10 or 15 minutes. then let cool for 10 minutes before devouring.
7. you can eat this white rice and bread too.
tips: you can add virtually anything u want like mushrooms and broccoli... anything. also leave your window open and the fan on so u dont get tomato smell everywhere.

This is an amazing potato soup recipe. it is so comforting on a cold winter day and is easy to make!
2 medium potatoes (about 2 cups chopped)
3 tablespoons butter
1 cup diced white onions
2 tablespoons flour
4 cups chicken broth
2 cups water
1/4 cup cornstarch
1 cup instant mashed potatoes
1 teaspoon salt
3/4 teaspoon pepper
1/2 teaspoon basil
1/8 teaspoon thyme
1 cup heavy whipping cream or half-and-half
GARNISH
1/2 cup shredded cheddar cheese
1/4 cup crumbled cooked bacon (optional)
1 chopped green onion (green part only)

Wash potatoes thoroughly and microwave until tender.
If you would like you can always bake in a 400 degree oven for one hour or until done.
As the potatoes are cooling, melt your butter in a large saucepan and saute your onions until light brown.
Add in your flour to make a roux.
Add in your chicken broth, water, cornstarch, instant mashed potatoes and spices and bring to a boil.
Reduce your heat and simmer for about 5 minutes.
Take your cooled potatoes and peel off the skin and chop up into desired pieces.
Add in your chopped up potatoes and the heavy whipping cream to your soup and bring it back to a boil.
Reduce heat and simmer for about 15 minutes or until it is thick.
Garnish with cheddar cheese, crumbled bacon and green onions if you like.

-Here is an incredible tomato soup recipe, one of the best soups I've ever made! Goes great with a grilled cheese sandwich!
ingredients:
2 lbs plum tomatoes
6 garlic cloves, peeled and whole
1/4 medium red onion
1 tablespoon olive oil
1 tablespoon balsamic vinegar
2 sprigs oregano, remove leaves from stem
3-4 basil leaves
salt
pepper
2 cups fat-free vegetable broth or fat-free chicken broth or water
1/4 cup parmesan cheese, shaved or grated (optional)

Pre-heat oven to 375 degrees.
Wash and cut tomatoes, placing in a shallow baking dish cut side down.
Add onion pieces, garlic, oregano and basil to the pan.
Drizzle vegetables with olive oil and balsamic vinegar.
Season with salt and pepper.
Bake for 45 minutes.
Place roasted vegetables in food processor bowl or blender and begin puree. Slowly add broth or water until soup has desired consistency. Continue blending until smooth.
An immersion blender also works very well. (If you warm the broth first, the soup will be hot without reheating.).
Serve garnished with cheese if desired.

Spinich and Potato Soup with chicken
Ingredients
1 Bag of Fresh Spinich)chopped)
1 onion chopped
2 stalks of celery chopped fine
3 tbs of Butter
1 Clove of Garlic (minced)
4 medium size potatoes peeled and (cubed)
Pepper and Salt
2 chicken breasts cut up
In a large saucepan heat butter slowly, add chopped onion and saute., Then add fresh spinich, celery, garlic pepper and salt; then add potatoes and then chicken Then add enough water to cover everything and two more inches above ingredients. Then simmer slowly for 1 hour and serve.

One big pot..acouple of pork hocks[cheap at the butchers or meat dept] I put these on to boil and then simmer for about 2 hrs in about 2 or 3 quarts of water.If you dont want to salvage the meat and cut it into little bits and return it to the stock.....just throw them out.Add to the simmering stock..turnip,onion,carrot,parsnip,all cut up in small chunks,add a handful of rice ..some split peas and when its almost done throw in some sqaush and potatoes...add salt and pepper or garlic to your taste.The whole thing takes about 3 hours.When the vegetables are quite tender..I just puree it all up right in the pot with an eggbeater,Make lots..its really good and freezes well.Ive been making this for years..my mamma did..my gran did too i meant to say parsnips up at the top

if you like veggie soup, just take some ground turkey and fry it up with some onions. Put some tomato or vegetable juice (like V8) and add some canned or frozen, even fresh if you have the time to spare and cook it in a pot with the fried turkey and onions. (drain it first of course.)
