I am just wondering what herbs work best with lamb. I am new to this lamb thing.

rosemary, thyme or mint (they are from the same family), garlic, or roasted garlic for a sweeter flavor. What I like to do (although this takes a little time) is roast garlic, and then puree it. I take my lamb chops, and dip them thoroughly in the roasted garlic puree. Then I coat them in a seasoned herb bread crumb mixture (rosemary, thyme, salt, pepper, panko breadcrumbs combined in a food processor till coarse ground and green.). Then I roast them in 450 oven until they are of my desired doneness. There are tons of things you can do with lamb.
