get swatches from the paint store and tape them up . some stores offer a sample paint in a roller container so you can paint a 3 ft section to see if it looks good, i used it on a large sheet of thick paper and taped to wall. i think a deep yellow or a red would look nice but try whatever you like with above method to see with your lighting what works.

I think a dark green would be a great color in contrast to the light cabinets, unless the floors are real dark. When you contrast light with dark it really gives a nice"pop". For example, have you seen dark walls with light baseboard or crown molding? (visit some model homes if not) Looks sharp!

I'm assuming you are talking paint colors. Pretty much anything, actually, because black goes with pretty much anything. I'd go with something (mildly) wild, because everything else is probably neutral. Light purple maybe? It's your taste, just go for a very muted color, preferably other than beige. Orange is found to improve the (perceived) taste of food.

At first thought, I was going to say a gold...but I studied your question for a while and finally decided on a sherwin williams paint..
Tansy Green.
You could accent in red's and golds to balance with the cabinets.

What do you want to catch your eye the most, the counter or cabinets? If you want the counter to pop, then go with a light neutral. But, if you prefer the cabinet to stand out then choose a darker color such as brown.

any color. Your cabinets and countertop are neutral. Your kitchen will become whatever color you paint it. It's a blank canvas and there are very few colors that wouldn't work.
My personal taste for this look:
shades of green

i think red or soft to sunshine yellow- would be an awesome contrast-but if you're looking for not such bold colors, why not try cream, or dusty pink. I think you can't lose with your color choice- since the granite is in neutral colors....Good Luck!

I have found it very helpful to have different colors of material and thumbtack them to the wall, this will help you decide which color you like best.
