I like stuffing them with a black beans and rice recipe from epicurious.com (It's called Tommy's Rice and Beans, and I use basmati rice and it's low-fat). Put that filling on the tortilla with a little shredded cheddar and you have an instant soft taco. I love that rice and bean recipe, I make it about once or twice a month.

Smoked salmon and light cream cheese

turkey breast with cheese, lettuce, tomato and light mayo or ranch dressing

Breakfast burrito (scrambled eggs with onion, tomato, green
pepper and shredded cheese).
Use light cheese of course.

Or you can buy the marinated chicken breast for fajitas and saute that with onions and peppers. Place in the tortilla with low fat shredded cheese and bake in oven. (Coat the tortilla with some olive oil) Serve with beans/rice/guacamole and salsa.
