INGREDIENTS
2 (3 ounce) packages Oriental flavored ramen noodles
3 eggs, beaten
vegetable oil
4 green onions, thinly sliced or any other type of onions
1 small carrot, peeled and grated
1/2 cup green peas
1/4 cup red bell pepper, minced
2 tablespoons sesame oil
soy sauce
DIRECTIONS
Boil ramen noodles for 3 minutes, or until softened, without flavor packets. Reserve flavor packets. Drain noodles, and set aside.
Heat 1 tablespoon oil in a small skillet. Scramble eggs in a bowl. Cook and stir in hot oil until firm. Set aside.
In a separate skillet, heat 1 teaspoon of oil over medium heat. Cook and stir green onions in oil for 2 to 3 minutes, or until softened. Transfer to a separate dish, and set aside. Heat another teaspoon of cooking oil in the same skillet. Cook and stir the the carrots, peas, and bell peppers separately in the same manner, setting each aside when done.
Combine 2 tablespoons sesame oil with 1 tablespoon of vegetable oil in a separate skillet or wok. Fry noodles in oil for 3 to 5 minutes over medium heat, turning regularly. Sprinkle soy sauce, sesame oil, and desired amount of reserved ramen seasoning packets over noodles, and toss to coat. Add vegetables, and continue cooking, turning frequently, for another 5 minutes

This is a simple pasta dish ...I have it for dinner often because its easy to throw together but more importantly it tastes great-

pasta (Penne Rigate or pasta bows for 2 people)
1 large onion, chopped thinly
2 green peppers, chopped thinly
1 small red pepper, chopped thinly
2 tablespoons olive oil (Not virgin!)
20 g butter
fresh basil, chopped (just a bit)
grated parmesan cheese (, to serve)
1 tablespoon pine nuts

Boil water in a large pan, add pasta, return to boil and turn off the heat, leave for 15 minutes (it really does work!).
While you are awaiting for the pasta heat a wok or a frying pan and add the oil and.
Fry onions'till the're"limp", add the butter.
Stir-fry until the onions have gone golden.
Add green peppers and stir-fry for 2 minutes.
Add red peppers and fry for another 2 minutes (I like crispy peppers, if you like yours limp the use more time and add the peppers earlier in the cooking).
Add basil and pine nuts.
Remove from heat.
Test the pasta to see if its done, if its not then boil the water up again and it will be.
Strain pasta and add to the vegetables, mix and serve.
Sprinkle with parmesan cheese.
Use parmesano Reggiano for top quality taste

Slice your onion, chop your peppers. Heat a little olive oil in a skillet. Once hot, add some minced garlic. Cook garlic about 3 minutes, then add your veggies. If you had a tomato, chop it up and throw it in too. Some chicken would be nice here too. Just chop it up and throw it in. Start cooking your noodles. Do you have some spaghetti sauce? If so, when the veggies are almost done, add it in the pan and stir. Add salt and pepper to taste. Once the sauce is hot and noodles are cooked, serve and top with parmesan if you have it.
