This I believe refers to the condition of the refrigerant vapour which has left the evaporator and is about to enter the compressor. At the pressure prevailing what is known as the saturated vapour temperature refers to the temperature at which liquid droplets start to form. This temperature can be found by looking at an equilibrium phase diagram for the refrigerant. The degree of superheat is the temperature difference between the actual (superheated) vapour and that of saturated vapour.
