Cucumber Tomato Salad - Check it out

1 large cucumber, cubed
1-2 medium tomato, cubed
1/2 small onion, chopped
fresh basil, chopped
garlic salt
pepper

Add cucumber, tomato and onion to a bowl with a cover.
(preferably tupperware or something similar.) Add garlic salt, pepper and basil to taste.
Seal bowl and shake.
Refrigerate for at least 1 hour.

I typically go with some leafy green (like spinach, head lettuce or romaine lettuce) that I coarse chop, some Italian Roma tomatoes and cucumbers sliced thin on a mandolin, chopped baby corn, pickled cactus (nopalitos) coarse cut, feta cheese crumbled, and either baby carrots or water chestnuts for crunch.

That is my typical eat-it-everyday supper salad with variations in the summer when I can chop home-grown fresh basil or oregano or mint into it instead of store-bought cukes.
