I would make food. People seem to enjoy it.

Make ranch chicken enchiladas....they are SO easy and they take no time to make. Here's my personal recipe....

Canned shredded chicken(the less fat the better) preferably at least 97% fat free.
flour tortillas- fajita size
packets of ranch dressing mix
sour cream- low fat
canned chopped green chiles
shredded cheese-I usually use monterey jack/colby mix

For 5 people(2-3 enchiladas a piece)
put 2 large cans of chicken in a bowl and break it up into shreds
Add small can of chopped green chiles- drained
add about a cup to a cup and a half of cheese
add about 1 and a 1/2 packets of Ranch dressing mix
add about 1-2 good size spoon fulls of sour cream
Mix well and taste. The mixture should not be runny and not be too thick. It should have a really nice ranchy flavor.
Preheat oven to 350 degrees
Spoon the mixture into the middle of the tortilla and roll(don't add thick layer...it ends up being overpowering)
Place the rolled tortilla mixture into a pan and continue with the rest of the mix. Once you have all tortillas filled and placed in the pan(s), put cheese on top and place in oven for 15 minutes, until cheese is melted and the edges of the tortilla are starting to get golden brown. Enjoy!

For more people, just double or triple recipe....and make sure and season to your tastes! You might try cooking one tortilla and seeing how it tastes first...then you can alter the recipe after if you aren't satisfied. The recipe can also be made without green chiles if you prefer. Just remember to not use low fat cheese. It does not melt correctly. This recipe is a family favorite in my house...and anyone I have ever cooked for has loved it! I can even get picky kids to eat it!

You can also sub out the canned chicken for regular boneless skinless chicken cut into small chunks....or shredded. It is actually better this way, but the other way is SO easy and takes less time....and is still great!

A big batch of "Party Beans' is always a hit.
1/2 lb bacon cut into small pieces, and with that saute a large chopped onion. To that add 1 can of:
green beans
wax beans
2 cans of pork and beans
kidney beans
Add 1 c catsup
1/2 c brown sugar (or more)
1/2 tsp dry mustard
1-2 tsp cider vinegar
mix all together adjusting for taste and bake on low either in oven crockpot or on top of stove until it is all baked together about 1 hr.
Enjoy.
I always double this and doubled it makes about 10 cups.
note: sometimes I add in a can or two of corn for color

I like meatballs. Everyone likes meat especially when it's warm and this heats up well. You can modify it to your own tastes with:

- a jar of spaghetti sauce
- a can of sweet & sour sauce (in the Asian food section)
- a bottle of barbecue sauce
- a bottle of swedish meatball sauce

You can buy a disposable microwave container at the grocery store and just nuke it in the microwave at the pot luck so you don't have to take a dirty dish home.

Party Pasta Salad

INGREDIENTS:
1 bottle Bernsteins Sweet Herb Italian Dressing
2 cups colored rotini pasta (corkscrew)
1 red or yellow bell pepper, cut in strips (optional)
1 cup fresh broccoli, cut into bite size
1/2 cup fresh carrots, cut into bite size
1/2 cup chopped cucumber, peeled
1/3 cup fresh mushrooms, sliced
1/4 cup red onion, chopped
1/4 cup green onions, sliced
1/4 cup celery, chopped
2 oz fresh parmesan cheese, grated

DIRECTIONS:
1. Cook pasta according to package directions. Rinse in cold water, and drain.
2. In a large mixing bowl, add all chopped vegetables, mix well. Pour on 1/2 of the salad dressing, mix well. Add pasta, fold gently until mixed. Add parmesan cheese, stir gently. Chill several hours. Stir gently before serving and add remaining dressing if needed.


You can buy premade meatballs and pour sauce over and cook in crock pot for 4 hours.

Sweet & Sour Meatballs

1 lb ground beef
1 tsp garlic salt
dash pepper
1 sml can pineapple (optional)
1 can or jar sweet & sour sauce (I like the Contadena brand, but any will work)

Combine first 3 ingredients. Make into meatballs, 1 to 1 ½ inch wide. Place in shallow casserole dish and bake in 350 F oven, for 20 minutes. Drain of grease. Bake for 10 more minutes. Drain again. Pour sauce over meatballs and bake for 15 minutes. Serve over rice. Makes 2-4 servings.

This casserole has been a big hit.. Everywhere my mom goes they always ask her to bring it. It feeds a lot of people tooo...

My Mom's Potato Casserole

1 large bag of cubed hash browns
1/2 block of velveeta cheese (i use low fat)
1 can of cream of chicken soup
1 16oz. sour cream
Cornflakes
Butter

Dump hash browns in casserole dish.
Mix cream of chicken soup and sour cream together..set aside
Melt butter and add cornflakes
Add cubed cheese to hash browns
Add cream of chicken soup and sour cream mixture to casserole.
Mix well.
Top with buttered cornflakes
Cook 350 for 45-55 minutes or until golden brown

Personnallly, i love chili and i love spam. So i make turkey spam chili and put out bowls of corn chips and tomato sauce and avocado dip. my neighbor likes exotic chili so i make one pot for his family with something special like rattlesnake meat or i get a small to medium size dog from the pound, you know one they are gonna put down, and add extra herbs.

A taco salad. Spaghetti. Cheese (the fancy stuff) and crackers. Or, go to the nearest grocery store, and go to the deli, and buy a couple pounds of coleslaw, or another salad. Have fun!

It depends on what everyone else is bringing also. Is for lunch,dinner or just snacks?You could make a cassrole, cheesy potaotes, veg cassrole.also. is good and people enjoy is pickle wraps,onion wraps , you could bring little mini sandwiches with lunch meat and chese?.
