From our Hispanic brothers and sisters in Christ, don't forget:
+ Quesadillas
+ Chili rellenos
+ Fish or shrimp tacos and burritos
+ Cheese enchiladas

With love in Christ.

There are lots of great veggie and fish recipies out there that I make with a Catholic Friend of mine over Lent, look on the internet for Vegeatable recipies or you might even try Lent Recipies and I bet you'll find lots of them. A personal favorite meatless dish of mine is Eggplant Parmigan, Spinich alfredo is another great one, Or try frying up a Portabello mushroom with some olive oil like a burger with some cheeze or even just topped with your regular burger fixens (( if you are extra strict and don't to cheese over lent)). Also big salads are great as well.

Hey, it's not just fish and pasta anymore. Try some black beans and rice! And don't forget baked potatoes.

Hey, did you hear? KFC wants to launch a new fish sandwich for Lent. Seriously. They want the pope's blessing, probably so they can use it in an ad campaign.

hey, not catholic, but trying to eat more fish - check out anything for fish or seafood. Also, legumes are hot right now along with rice and veggie dishes.

I know that's not a recipe but a food group - hope it gets you in the right direction.

I cook and eat pasta to worship the Flying Spaghetti Monster.
My favorite recipe are pasta and lobster, pasta and pesto, pasta and shrimps with garlic.
He wiggles His noodley appendages for our delight. I fell Him in my stomach after I have accepted Him and I know that I am saved.

risotto is good, or just use fake meat for vegetarians in the same way you'd use normal meat, although I suppose that's kind of cheating cos ur not exactly suffering then...
