If I put some oatmeal or oranges on my skin, will my skin absorb the vitamins/minerals in it?

Generally, no. The problem is that the vitamin molecules are larger than the openings in your skin cells, so they can't be absorbed topically.

No because when you actually eat the food, the minerals/vitamins are in your body. Your skin acts like a barrear blocking things out like germs, from entering your system. If you could actually do that, I think the world would be much skinnier and healthier.
