The leaf you are referring to is actually the cotyledon. To me, it looks like the words are actually burned into the leaf through the seed coat. This kills the tissue and leaves a scar there in the shape of the brand. At least that is my best guess...

it is not written on the leaf !
its only written on the bean, they just carve it in the bean.
