Can this cheese be frozen?? also how long can it be kept in fridge??

Absolutely! Just shred it first, put it a ziplock, squeeze the air out, and toss in the freezer. I do this all the time, in fact yesterday I shredded 2.5 pounds of Parm, Asiago, and Romano for the freezer. It's cheese on demand and hold up perfectly well, it's just like fresh.

Yes, hard or soft cheeses can be frozen when airtight for up to a year in a 0º freezer. Cheddar type cheeses may be frozen but will turn very brittle.

Parmesan can be frozen but you have to make it airtight
