Dirt Cake. (It is vanilla pudding, cool whip, cream cheese and crushed oreos). You can even buy a new flower pot and fill it with the dirt cake and insert a fake flower or plant before serving. It is really cute.

Wow!! There are so many ideas. A lot might depend on what type of meal you are serving as to whether you would want a light dessert or a heavy dessert.
One good light dessert is Angel Food Cake and you can serve with any kind of fruit sauce or fresh fruit. Here is a Spiced Angel Food recipe I really like –
1 box of white angel food cake mix
1/2 tsp. nutmeg
1/2 tsp. allspice
1/2 tsp. cinnamon
1 tsp. ground ginger

Just add the four spices to your angel food cake mix and bake according to directions on the box.
Be sure to use a serrated knife to slice angel food cake. Slice in a back and forth motion to assure a clean cut.

Here’s another favorite of mine –
Strawberry Pretzel Dessert

2 cups crushed pretzels
3 tablespoons sugar
3/4 cup softened butter
8 ounces cream cheese
1 cup sugar
1 cup whipped topping (see note)
2 heaping cups sliced strawberries, fresh or frozen
1 package (6 ounce) strawberry flavor gelatin
2 cups boiling water

Crush pretzels with rolling pin, food processor, or whatever method. Mix in sugar and softened butter. Spread onto bottom of 9 by 13-inch baking pan; press down and spread evenly with spoon. Bake in 400-degree F. oven until just lightly browned, 6 to 10 minutes. Set aside to cool.

Thoroughly mix cream cheese, 1 cup sugar and whipped topping and spread over crumb crust when it has completely cooled. Dissolve strawberry gelatin in 2 cups boiling water. When cool, add strawberries and leave to thicken slightly. Then spread over cream cheese layer.

Refrigerate until firm before cutting into squares for serving.

Note: Most cooks just use a topping such as Cool Whip in this recipe but a whipped topping made from a mix such as Dream Whip works fine and isn't quite as rich. It takes a little extra time to prepare, however. You can whip it up with milk and vanilla in the electric mixer and, removing any extra topping not needed, mix the topping, cream cheese and sugar in the same bowl. A 9-ounce package of pretzels is more than enough. The stick style is easiest to crush.

If you are having a lot of family, you could make two cakes or two of the strawberry desserts. Good Luck. EW

Pineapple Whip Cream Cake

No. 2 can crushed pineapple (2 ½ cups)
¼ cup sugar
¼ cup cornstarch
2 layers white cake (cake mix) prepared per package directions

Combine first 3 ingredients in a small saucepan. Cook over low heat until thickened, about 5 minutes. Make the 2 layer cake from a mix or using your favorite recipe. When cool, split one layer in half horizontally, making 2 layers out of one. Put one half on plate; spread with pineapple filling. Top with whole layer, top with more filling, top with final layer and put remainder of filling in the center of top of cake, leaving about 1 ½ inches around edge for frosting.

Whip Cream Frosting:

In saucepan, add 4 tbs flour and 1 cup milk Cook and stir constantly, until thick. Cool. Cream 1 cube oleo (imperial margarine) and ½ cup shortening together. Add 1 cup sugar and 1 tsp vanilla. Cream together. Mix all together on high speed on mixer.
Frost remainder of cake with frosting (sides and top edge). If more frosting is desired it can be added between the layers as well.

Miniature Cheesecakes

1 1/2 packages (8 oz size) cream cheese
1/2 cup sugar
2 eggs
3/4 tsp vanilla

Topping:
1 cup sour cream
1/4 cup sugar
1/2 tsp vanilla
strawberry or pineapple preserves

Let cream cheese soften in a medium size bowl; add 1/2 cup sugar, and cream together thoroughly.

Add eggs, on at a time, beating well after each addition.

Add 3/4 tsp vanilla and beat until smooth and creamy.

Place paper cupcake (foil if you have them) in a muffin tin and using a teaspoon, fill each one 2/3 full. Bake in a preheated 300 F oven 20 to 25 minutes. Cool 10 minutes (cakes will cave in slightly in center).

Make topping: In a small bowl, thoroughly mix sour cream, sugar and vanilla. Using a teaspoon top each with a small amount, enough to cover the top. Top with small amount of preserves in center of each cake. Return pan to oven and bake an additional 10 minutes. Makes about 2-3 dozen.

Take some lemons. Cut them an inch from the top and hollow them out. Fill them with lemon sorbet and put them back in the freezer. Such a good presentation!
