"Plating" refers to the application of an extremely thin coating using electrical energy to bond the coating to the base material.
"Cladding" refers to the application of a much thicker coating, typically by rolling, welding, or casting a substance over an inner material. (i.e. it uses mechanical energy to create the bond, rather than electrical energy).
Silver, gold, platinum, and other precious metals are often bonded over less costly - but more durable - materials. Other compounds, such as nickel-chromium and nickel-cadmium are used for other purposes, like resurfacing damaged structural members.
