My mother and I recently decided to try to become vegitarians. Any good recipe suggestions?

Thai Roasted Veg
For the Red Curry Paste
2 teaspoons coriander seeds
1 teaspoon cumin seeds
1 garlic clove, finely chopped
2 teaspoons fresh ginger, finely chopped
2 teaspoons lemongrass, finely chopped
2 fresh red chilies, de-seeded
For the roast vegetables
2 aubergines, chopped into 2 . 5cm/1 inch pieces
1 lb button mushrooms, left whole
16 cherry tomatoes
2 red onions, quartered
250 g firm tofu, cubed
1 tablespoon shoyu or light soya sauce
1 tablespoon peanut oil
1 lime, juice of or lemon, juice of, only
For the garnish
2 tablespoons fresh basil, finely chopped

Preheat oven 190°C.
First make the red curry paste:.
Put all the ingredients into a blender and blend until they form a smooth, thick paste. Set aside.
Put the vegetables and tofu onto an oven proof tray. Mix the shoyu, groundnut oil and lime or lemon juice and pour over the vegetables. Toss well to coat.
Roast the vegetables for 25 minutes, then add the curry paste and toss well again to coat. Return to the oven for another 5 minutes.
Transfer to a serving platter and garnish with basil.


Veg Sammy

1 small eggplant, thickly sliced
1/2 red bell pepper
1/2 yellow bell pepper
1 1/2 tablespoons olive oil
1/2 tablespoon thyme, freshly chopped
1/2 tablespoon basil, freshly chopped
2 tablespoons feta cheese, crumbled
1/2 (7 1/2 ounce) can garbanzo beans, drained, liquid reserved (chickpeas)
1 garlic clove, minced
1 tablespoon lemon juice
1 tablespoon tahini
1 tablespoon yoghurt
1/2 teaspoon ground cumin
1 pinch paprika
2 large crusty bread rolls, chiabatta works well

Place the bell peppers under a medium grill/broiler skin side up for approx 5-10 minutes.
Remove when skins are charred and starting to blister.
Immidiatly place into a zip lock bag for about 5 minutes, now the skin should come off really easily.
Cut into chunky strips.
Meanwhile, in a small bowl combine the olive oil, thyme and basil.
Add the sliced eggplant and mix well so that the slices are coated.
Grill or griddle for approximately 10 minutes turning once.
For the houmous combine the garbanzo beans, garlic, tahini, lemon juice, yoghurt, cumin and paprika in a blender and mix until smooth, if required add a little of the reserved liquid from the beans until you reach the desired consistency.
Slice your rolls, spread generously with houmous, cover with layers of the grilled peppers and eggplant and sprinkle with feta cheese.

Potato Soup (Vegitarian):

1¼ hours 20 min prep
4-6 servings

3 teaspoons butter
1 teaspoon cayenne pepper
1 vegetarian vegetable bouillon cube
1 cup onions
3 garlic cloves
3 tablespoons flour
2 quarts water
salt and pepper
4 cups potatoes, chopped
1/2 cup milk or heavy cream
3 tablespoons chopped fresh parsley

1. Melt butter in a 5 quart pan.
2. Add onion and cook slowly for 5 minutes without browning.
3. Blend in flour and cook for 2 minutes.
4. Gradually add water, stirring to prevent lumps.
5. Add potatoes, bring to a boil and simmer partially covered 45 minutes.
6. You can prepare ahead to this point if you like.
7. Before serving bring soup to a simmer and stir in milk and bouillon cube and cook for 10 more minutes.

Asian Broccoli Salad:

26 min 20 min prep
6-10 servings

1 head broccoli
1/2 cup sliced fresh mushrooms
1 grated carrot (size to taste)
1/2 cup sliced almonds (raw)
Dressing
1/4 cup vinegar
1/4 cup sesame oil
2 tablespoons honey
3 tablespoons tamari
1/2 teaspoon fresh grated ginger
1 clove pressed garlic

1. Peel tough"skin" from broccli stems; slice stems about 1/8"- 3/16" thick.
2. Cut florets into bite size picees.
3. Steam broccoli until just crisp.
4. (Stems will take slightly longer than florets to steam.) Do NOT overcook.
5. Mix dressing ingredients and toss w/ broccoli.
6. Stir in grated carrot, sliced mushroom and almonds.
7. Chill.

SERVINGS About scaling and conversions

INGREDIENTS
1 teaspoon olive oil
1/2 medium onion, thinly sliced
1 small green bell pepper, thinly sliced
4 ounces mycoprotein pieces, e.g., Quorn™
1 clove garlic, chopped
1 teaspoon paprika
1 (14.5 ounce) can whole peeled tomatoes, chopped, juice reserved
1/2 cup red wine
1 teaspoon dried oregano
1 teaspoon tomato puree
1 teaspoon sugar
salt and pepper to taste
DIRECTIONS
Heat the olive oil in a large skillet over medium heat, and saute the onion 5 minutes, until tender. Mix in the green pepper and mycoprotein pieces, and saute 5 minute, until the pepper is tender. Mix in the garlic and paprika.
Stir the tomatoes with their juice into the skillet. Mix in the wine, oregano, and tomato puree. Bring the mixture to a boil. Reduce heat to low, and simmer 25 minutes, until thickened. Just before serving, stir in the sugar, and season with salt and pepper.

i dont specifically have any recipes but there are a bunch of good recipe websites out there- just check some out. like Rachel Ray, barefoot with contessa, recipes.com , kraftfoods.com, cooks.com they all have some wonderful recipes for all types of people from dieters, veges, liquids, sweet tooth. hope this helps!

Human beings are carnivores as well as herbivores, eat meat as mother nature intended for you to do. Eating less meat and adding more vegetables to your diet can only enhance your health and wellbeing. Rice with vegetables is common food among orientals, and I havn't seen many overweight people of oriental persuasion. They do not use much meat, but they still include meat in their diets. Much more meat and vegetables are added to Americanized oriental food to appeal to american taste than is used in true oriental cuisine.

Try stir frie. It's great with eggs and as a breakfast. You make stir frie with vegetables and cook it in vegetable oil till it's brown.

PS: Cook over a stove.

you could just whip up a delicios manto-fas.
it is sooooo good!!! it is a blend of fruit salad and veg. salad!!!
