My granny used to cut a wedge off of the bottom, so it would sit without tipping, then put butter, brown sugar and a slice of bacon into each half. They were covered with foil and baked until tender. I hated it, but my entire family LOVED them.

1 Acorn squash
1 Tbsp Butter
2 Tbsp Brown Sugar
2 teaspoons Maple Syrup
Dash of Salt

1 Preheat oven to 400°F.

2 Using a strong chef's knife, and perhaps a rubber mallet to help, cut the acorn squash in half, lengthwise, from stem to end. Use a spoon to scoop out the seeds and stringy stuff in the center of each half. Score the insides of each half several times with a sharp knife. Place each half in a baking pan, cut side up. Add about a 1/4 inch of water to the bottom of the baking pan so that the skins don't burn and the squash doesn't get dried out.

3 Coat the inside of each half with 1/2 a Tbsp of butter. Add a dash of salt if you are using unsalted butter. Add a Tbsp of brown sugar to the cavity of each half. Dribble on a teaspoon of maple syrup to each half.

4 Bake in the oven for 1 hour to 1 hour 15 minutes, until the squash is very soft and the tops are browned. Do not undercook. When finished, remove from oven and let cool a little before serving. Spoon any buttery sugar sauce that has not already been absorbed by the squash over the exposed areas.

Serves 2 to 4, depending on how much

BAKED ACORN SQUASH

I have two recipes for baked acorn squash that I like. I never can decide which I like better so I usually make one half of the squash one way, and the second half the other. I have also never measured the ingredients. I begin either recipe, or a combination thereof, with one acorn squash. Cut it in half through its poles, (as in north and south), and scoop out the seeds. You can save the seeds and roast them if you like. Place the halves flesh side down in a covered baking dish, (such as Corningware), with enough chicken stock to come at least a quarter inch up the side of the squash. Bake in a preheated 350 degree oven for 45 minutes. Remove the squash, drain the fluid, and turn the squash over, flesh side up. Cover the flesh with:

Butter to taste. (I like 2-3 tablespoons per half but you can adjust it accordingly).

Brown sugar. Just sprinkle it on until the entire half is lightly coated.

Powdered Cinnamon. A light dusting over the entire surface.
Salt and pepper to taste.

Here’s where the recipe can go one of two ways. After applying the above ingredients add either 1) allspice and ground cloves and/or nutmeg or 2) 2-3 teaspoons of soy sauce per squash half. Allspice and cloves are strong spices so I would sprinkle them lightly. Now put the squash back into the oven for 10-15 more minutes, flesh side up, without the lid. Try each recipe on each half of the squash and choose your own favorite.

Let's not make this too complicated. Acorn squash is delicious in the microwave and you can cut down a lot of time, too.

Cut squash in half horizontally. Trim bottom of each half if necessary so it doesn't tilt over. Scoop out seeds. Put each half into a microwaveable bowl (I just use a regular cereal bowl). Salt and pepper cut side to your taste. Add about a tablespoon each of butter and brown sugar to the cavity. Cover the whole thing, bowl + squash, with saran wrap. Microwave on high for 5-7 minutes depending on the power of your microwave and the size of the squash.

Remove from microwave, take off saran wrap and serve. This will be extremely hot, so take care when removing the wrap and handling the bowl. It comes out tender, sweet and delicous.

PREP WORK

Pre heat oven to 375 - 400 degrees F.


HOW TO MAKE AT HOME

Scoop the seeds out of each half with a spoon

Add 1 pat of butter, 1 teaspoon of honey or maple syrup, 1 tablespoon of brown sugar, salt and pepper to the hollow scoop of each half.

Place upright on a greased cookie sheet and roast for about 1 hour or until tender when flesh is poked with a fork.

This is a delicious, quick and easy side dish that is great anytime of the year.

Cut it in half lengthwise and scrape out all the seeds and pulp. Rub the cut rim of the squash with butter (or margarine, if you prefer) and place them cut side down on a baking sheet. Bake in a preheated 350 degree oven for 45 minutes. When the time is up, flip them over (carefully!) and place about a tablespoon each of butter and brown sugar inside the scooped out part. Return them to the oven and continue baking for 15 more minutes. Serve with a little salt and pepper and voila!

Cut in half & scoop out the seeds/strings.

Rinse and then dry the cavity out with a paper towel.

Fill the cavity with brown sugar about 2/3 full. Top with I Can't Believe Its Not Butter (1/3) then sprinkle with salt & pepper.

Cover tightly with tin foil; place halves in a baking pan (resting against the sides of the pan so they don't fall over) and bake for 30-45 minutes at 350 degress or till fork-tender.

Alternately, you can cook in the microwave by placing the halves in bowls, and covering with a larger bowl to steam. Cuts the cooking time in half.

I would skip the brown sugar and the bacon and use organic butter to put on it after it baked. I like the idea of cutting off a wedge off of the bottom of the squash so that it stays upright in the oven while it is baking.

Cut in half and remove seeds. Place cut side up in casserole dish. Fill each half with chopped onion, place pat of butter on top. Sprinkle with salt and pepper. Put about 1/2 inch of water in bottom of pan. Cover tightly with foil and bake. Usually takes about 40minutes on 350 or 400. You can bake it along with a roast. Just adjust the time according to the temp.

cut in half, clean out the guts, and place face down in microwavable dish, and wave on high for 10 minutes
turn the halves over, put 2 tablespoons each butter and brown sugar in the halves, sprinkle with cinnamon. I usually add raisins as well.
Microwave another 10 minutes, and let cool some before handling.
I scoop the flesh out of the skins and mix it all together before serving.

I usually bake in pan with about 3/8" water with the squash upsidedown for 30-40 minutes
