I bought some sirloin steak last week and immediately froze it. I moved it from the freezer to refrigerator on Tuesday night. On Wednesday night it was still frozen. I guess it was probably thawed Thursday because Friday morning (today) I noticed they were thawed. But we have plans to eat out tonight. Can I make the steak on Saturday (after ~2 days being thawed)?

Yes, it will be fine. Generally 3 full days after it is thawed it should be used.

I'd certainly cook it well done, no pink in the middle, maybe eat just the vegetables and let the least favorite family member eat the meat. Better yet, have you thought about giving your dog a treat? Which is least expensive? The emergency room or the sirloin?

As long as the the vacuum is still intact then I'd go ahead & eat it tonight. As the person above said you are running out of time. Of course when you open it you'll know if turned or not, but it should still be good.
