Because glass is stable and unlike plastic does not leach substances that may react with the medicine. Some medicines may melt the plastic.

Plastic leaches out harmful chemicals.

Glass is least likely to have adverse reaction with all the weird
chemical mixtures that go into various medications.

Something to do with the light i believe.
They keep the medicine more pure.
