Ingredients:
2 cups unbleached all-purpose flour
1 1/4 cups sugar
2 teaspoons baking soda
2 teaspoons cinnamon
1/2 teaspoon salt
2 cups peeled, grated carrot (about 4 medium carrots)
1 cup peeled, grated apple (1 large apple), plus slices for topping
1/2 cup finely chopped hazelnuts (or any nut)
1/2 cup currants or raisins
1/2 cup flaked sweetened coconut
1 tablespoon flaxseeds
1 cup butter, melted
3 large eggs
2 teaspoons vanilla extract
Topping:
2 tablespoons sugar
2 teaspoons cinnamon

Preheat oven to 400 degrees F. Lightly butter 12 muffin cups.
Combine flour, sugar, baking soda, cinnamon and salt in a large bowl.
In another bowl, mix carrots, apple, hazelnuts (or other nuts), currants or raisins, coconut and flaxseeds. Stir into dry ingredients.
Whisk together butter, eggs and vanilla and add to the other ingredients. Fold together until just evenly moistened - do not overmix.
Divide the batter among the muffin cups. Top each muffin with an apple slice and sprinkle on cinnamon-sugar topping.
Bake 20-25 minutes (until tops are golden brown and a toothpick inserted into the centers comes out clean).
