Do you mean original Tabasco or brands of generic "Louisiana Hot Sauce" which are less hot and usually thickened up? I find original Tabasco keeps its oomph after opening but not most "Louisiana Hot Sauce" brands, neither Tabasco Green or Tabasco with Garlic.

I love that stuff, and I never refrigerate mine. I just keep it in the cupboard. And so far no ill effects over the years.

No, but in Louisiana it doesn't last long enough to make a difference! They eat Louisiana Hot Sauce on anything. ;)
